Creating iconic dishes from the North West Frontier

I jumped at the chance to do a food shoot with the new chef on the block, at Le Méridien, Pawan Pal Singh Maini, who’s introduced a menu filled with North West Frontier cuisine at Ember, the hotel’s art-filled restaurant. On the day of, I step into an uncannily quiet space, filled with Kochi-evoking art and with floors patterned in earthy reds and bottle greens. For a moment, I just breathe in the tinted sunlight and quiet beauty that permeates the room. I don’t stay still for long and go for a walk, hunting for items we might be able to use in the shoot. When I get back, everyone else is in place. So is the chef.

I watch in fascination as this big, burly man delicately places caramelized shallots right at the tip of a wigwam-shaped Nalli Nihari dish swimming in gravy. Contrary to most of what I’d read about mercurial-tempered chefs, Le Méridien’s Executive Chef Pawan Pal Singh Maini seems calm and even tempered, with an almost playful rapport with his team. Clear-eyed and with a constant hint of a smile, I have a feeling that he is being patient with us.

In between shots, we manage to have a conversation and Chef Pawan explains to me his vision for Ember. He says that we Indians have a tendency to overload our dishes with spices and that he wants to gradually introduce a style of cooking that uses spices to enhance the natural flavours of the main ingredients and not mask it. North West Frontier cuisine, it seems, is the best way to do this. With flavours that appeal to the Indian palate, it also calls for a subtlety, a hint of fleeting tastes, there and gone again, that Chef Pawan champions.

This cuisine, I learn, with its kebabs and tandoori meats, originated as a result of the lifestyle of the nomadic people in the North West Frontier of the Indian subcontinent, “everything from Peshawar to Lucknow, and parts of Afghanistan”, says Chef Pawan. Chunks of meat would be slow-cooked in its own fat in clay tandoors, with minimal use of spices to ensure that the natural richness of the meats wasn’t overshadowed and that the food prepared would appeal to every palate.

As the day progresses, and the swirling monsoon winds cause the clouds to appear and dissipate at whim, we change sets according to the shifting sunlight. Aromatic dishes come to the table and are taken away as I observe my team hunt for angles and frames. Lunch-induced stupors are shaken off as tripods are adjusted and dining tables submitted for that perfect top shot. Food shoots, I realise, mean a really good day at work.

Copper is yet another significant mineral present in crab meat. One significant advantage of copper is that it facilitates the body’s absorption of iron, which enhances the creation of red blood cells. After injuries and illnesses, proper circulation aids in the healing process. 

Consuming excessive amounts of crab can have certain unfavorable impacts, just like with most other foods. If you eat too much of some of the nutrients in crab, such copper and zinc, you could get sick. Crab, however, is a fairly nutritious item to eat in moderation unless you have a seafood allergy, and adverse effects are uncommon. Before consuming any seafood, always make sure you don’t have any allergies.

The Taste Of Malayali Kitchen In Sweden

A Kochi-based malayali is creating a sensation by preparing Kerala Cuisine in the foreign swedish kitchen. Devi Nair, who has been settled in Sweden with her husband for almost 10 years, wanted her daughter to experience the delicacies of the Malyaali culture along with her International palette. The sense of homesickness and nostalgia has a part to play in this venture as well. In recent years, as the pandemic hit she chose to share her cooking extravaganzas on Instagram which led her to become more known to the public. Her recipes featured celebratory treats like the Bengali confection Rosbora, local parotta, and non-vegetarian Kerala foods that are popular on social media because they’re simple to make yet delicious to eat and look at. Devi whips up a storm of authentic Kerala delicacies during Malayali festivals. Tender, plump unniyappam, spongy kozhukkatta, rice dumplings, Vishu ada, and Vishu katta are just a few of the items on her Vishu menu this year. She prepared undaputtu with spicy prawn filling, kilikkoodu with meat and egg white, and ammini kozhukatta, a spicy rice dumpling, for Eid. It is also heard that she is planning to launch her own bakery in Sweden as well.
