Maria Elizabeth from Bangalore with her very own The Lost Kitchen is trending with their Top Forward cakes, says that it’s their new way of presenting their cakes and there are endless possibilities. Talking about her crowd pullers she says ‘my cheesecakes, especially the Choco coffee caramel has been a banger among the crowd, it’s a sauce I found by mixing a lot of things but the result is amazing and everyone absolutely loves it’. Be it her brownies or lasagna she doesn’t add any preservatives and the homemade ingredients has more richness and value to the food she makes. - Creamy cake balls
‘The Good bite’ from Palakkad, owned by Sneha Varghese Kerala is trending even before the lockdown days and their home-made ingredients and flavours have made their customers always happy. The cake balls have made their seat steady in the business making the people in town crave for more once they have ordered. “It’s all about Passion, my mum used to bake even before lockdown, since lockdown started it started to affect our mental health too. Thus, baking was a stress reliever and we had a thought of turning it into business” says Sneha Varghese owner of The Good bite, one among the best home makers in Palakkad, Kerala. “The other new varieties consists of Arabian deserts like baklava, French classic dessert croquembouche and we won’t compromise the quality and quantity as well” she added while talking about the other trends in the business.

- Korean Box or Bento cake
Bento cakes or lunch box cakes are pretty, minimalist cakes first seen in Korea and now trending in India especially after the pandemic when celebrations and gatherings became restricted and has become a thing for most of the bakers.
‘CAKERY’ iced with love from Kottayam is by Shilpa Mariam Anil who had recently started her own bakes registered under FSSI after being in the field for 7 years. Shilpa says that the trend always changes but currently Korean box cakes have entered the market, which is a small and affordable cake one for any sweet tooth person. ‘’ I have started my training in Korean box cake and one important innovation I have brought is fondant art, fondant is hard to manage and master but with years of experience it becomes easy. I make edible figures and flowers out of fondants’’ says Shilpa who had also recently came up with Rose Velvet recipe made her customers drooling over her cakes.

“Recently I did my first offer sale. The ‘Mini Cube Cake Box’. I tried incorporating different flavors into a mini box and it was a success. The reviews were very positive. I also try to do signature recipes.” says Tania who tries to bring novel designs and also never compromise on the quality of the cakes. Be it rasmalai cake, gulab jamun cake or even motichoor cake, the fanbase for her dishes are vary. “Brownies have been a classic, but the number of variants there are, is actually surprising. New variants all the time and all of them taste just as heavenly as their counter parts. Tall cakes and pinata cakes are also very much in trend at the moment.” says Infancia divya about her bakes. Devi Nair, who has been settled in Sweden with her husband for almost 10 years, wanted her daughter to experience the delicacies of the Malyaali culture along with her International palette. The sense of homesickness and nostalgia has a part to play in this venture as well. In recent years, as the pandemic hit she chose to share her cooking extravaganzas on Instagram which led her to become more known to the public. Her recipes featured celebratory treats like the Bengali confection Rosbora, local parotta, and non-vegetarian Kerala foods that are popular on social media because they’re simple to make yet delicious to eat and look at. Devi whips up a storm of authentic Kerala delicacies during Malayali festivals. Tender, plump unniyappam, spongy kozhukkatta, rice dumplings, Vishu ada, and Vishu katta are just a few of the items on her Vishu menu this year.
