If the thought of cow’s milk makes you go meh, grab a bottle of soy milk and pamper yourself this rainy weekend!

It’s Saturday! There’s nothing much we can do, thanks to the rain Gods *Sighs* So, why not treat yourself to some mouth-watering recipes made with Soymilk. Yep! You read it right! Go on and try out some of our hand-picked recipes and tell us how they taste!

Fun fact: Did you know that scientists have discovered a way to make alcohol out of soy-milk? *thank god for them*

 CALLIOPE COCKTAIL

Pssst! Use a “Shaker” for Calliope drink recipe

INGREDIENTS:

  • 1 ½ oz Brandy – To keep yourself warm this weekend!
  • ½ oz brown crème de cacao (A chocolate based liquor)
  • 2 oz soymilk
  • 1 oz espresso (Coffee)

HOW TO:

  1. Pour the brandy, creme de cacao and soymilk into a cocktail shaker over 3 ice cubes.
  2. Shake well, and strain into your favorite glass (Go on, get ready to clink)
  3. Add a shot of espresso, dust with nutmeg, and serve. *Yummmm*

 

SOY YOGURT

To make homemade soy yogurt you’re gonna need only two ingredients: soy milk and a starter. So simple and cheap.

INGREDIENTS:

  • 4 cups soy milk (1 liter)
  • 1 teaspoon agar agar powder – (Vegetarian version of Gelatin)
  • 1/2 cup soy yogurt (125 grams) or yogurt starter powder (something to help in the curdling process)

HOW TO:

  1. Preheat the oven at 50º C or 120º F.
  2. Pour the soy milk in a saucepan, add the agar agar, stir and heat the mixture to 90º C or 195º F, but be careful because it shouldn’t boil.
  3. Pour the mixture in a bowl and let it cool til its just warm .
  4. Add the starter (soy yogurt or yogurt starter powder), stir and pour the mixture into glass jar.
  5. Turn off the oven, place the glass jar (without lids) inside and let stand for at least 8 hours, preferably overnight. You mustn’t open the oven during this process.
  6. What are you waiting for? Grab the jar and enjoy a mouthful!

 

SOY HOT CHOCOLATE

 

INGREDIENTS

  • 1 tsp of cocoa powder
  • 1 tsp of sugar
  • 300ml soymilk
  • A tiny bit of cinnamon (for the rich taste)

HOW TO: 

  1. Pour about 15ml of the soymilk into the bottom of the mug you’re making the hot chocolate in, and then put the rest on a pan on the stove.
  2. While bringing the soymilk to the boil, put a tiny bit of cinnamon (like 1/12 of a tsp), the  cocoa, and sugar in with the 15ml of cool soya milk and mix to a loose paste.
  3. Add a little more of warm soya from the pan to loosen it if you want.
  4. When the soymilk is bubbling, and just before it starts to foam, pour the milk into the mug about a 1/4 full, thoroughly mix the paste so you don’t have clumps of paste in the bottom, then add the rest of the just-foaming soymilk.

Variations: mix half soya cream with soymilk, and add melted spiced chocolate to the paste for SUPER luxury hot chocolate.

Slightly deviating from the topic here. It’s raining and we thought it is OKAY to indulge yourself in soul foods *thank god* So, here is our favorite recipe of roasted chicken n veggies. Go on, pamper yourself!

 

ROASTED CHICKEN n VEGGIES

INGREDIENTS:

  • 2 medium chicken breasts chopped
  • 1 cup bell pepper, chopped (capsicum)
  • ½ onion, chopped
  • 1 zucchini, chopped
  • 1 cup broccoli florets
  • ½ cup tomatoes, chopped
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon Italian seasoning (oregano, thyme, rosemary)
  • ¼ teaspoon paprika (optional)

HOW TO:

  1. Preheat oven to 500 degree F.
  2. Chop all the veggies into large pieces. In another cutting board chop the chicken into cubes.
  3. Place the chicken and veggies in a medium roasting dish or sheet pan. Add the olive oil, salt and pepper, Italian seasoning, and paprika. Toss to combine.
  4. Bake for 15 minutes or until the veggies are charred and chicken is cooked. Enjoy with rice, pasta, bread or a salad.

Benefits of Including Crab in your Diet

Crab has all the attraction of seafood without the fishy flavor that some people want to avoid. It is delightfully salty with a delicate mineral sweetness. Crabs were reportedly among the foods that coastal societies eaten a hundred years ago. On the menus of the greatest restaurants today, it stands out as the highlight dish. Crab is famous for its distinctive, exquisite flavor as well as for the health benefits it provides.

Omega-3 fatty acids and protein are abundant in crabs. The Food Experts advise two servings of fish and seafood every week, which is not difficult.

Crab is a low-fat, nutritious protein source that boosts metabolism and gives you energy. In reality, crab has less saturated fat and about the same amount of protein per 100 grams as other meats.

The Taste Of Malayali Kitchen In Sweden

A Kochi-based malayali is creating a sensation by preparing Kerala Cuisine in the foreign swedish kitchen. Devi Nair, who has been settled in Sweden with her husband for almost 10 years, wanted her daughter to experience the delicacies of the Malyaali culture along with her International palette. The sense of homesickness and nostalgia has a part to play in this venture as well. In recent years, as the pandemic hit she chose to share her cooking extravaganzas on Instagram which led her to become more known to the public. Her recipes featured celebratory treats like the Bengali confection Rosbora, local parotta, and non-vegetarian Kerala foods that are popular on social media because they’re simple to make yet delicious to eat and look at. Devi whips up a storm of authentic Kerala delicacies during Malayali festivals. Tender, plump unniyappam, spongy kozhukkatta, rice dumplings, Vishu ada, and Vishu katta are just a few of the items on her Vishu menu this year. She prepared undaputtu with spicy prawn filling, kilikkoodu with meat and egg white, and ammini kozhukatta, a spicy rice dumpling, for Eid. It is also heard that she is planning to launch her own bakery in Sweden as well.
